Let’s make Pecan Nugget Cookies – Recipe from Corkycrafts
1. What is your recipe?
Recipe – Pecan Nugget Cookies
Preheat oven 325 degrees
1 cup softened butter
1/2 cup sugar
2 tsps vanilla
2 cups all-purpose flour
1/2 tsp salt
2 cups ground nuts (I use pecans) your choice if you prefer other nuts
Powedered sugar i.e. confectioners sugar
Place your softened butter, sugar, and salt in a mixing bowl and cream until moist. My grandmother’s original recipe said to sift the flour but we’ve made it with and without sifting and it tastes the same. Use a medium bowl and put your flour in there. If you don’t shift flower then join the dark side with me we’ll be the evil chefs in the kitchen! sinister laugh. Add vanilla, and scrape down the sides of your bowl some then dump in your pecans or as we Southerners call it “Puh-kawns” then mix it all up again until well combined.. Make sure its mixed good if not add a touch more of vanilla not too much just a dash. I use my melon scooper to make round sized cookies. It can make about thirty but you can easily make fifty or so instead if you make them small enough. Cook in oven for 15 – 20 minutes, don’t brown! After they cool roll gently those little balls in powdered sugar and watch them disappear!

Anybody from the South loves Pecans. This recipe takes me back to childhood spending the night at my grams and cooking in the kitchen with my grandmother. My mother and sister hate to cook so I’m the one that continues the traditions with passed down recipes generation after generation during the holidays. Learned to cook from my grandmother and miss her dearly she lived to be 95 and as an adult I miss her so much.
